Sharon's Sweet Potatoes

Potatoes

3 cups cooked sweet potatoes
2 eggs
1/2 cup half and half, or to consistency
1/4 cup butter
1 tsp vanilla

Topping

1 cup brown sugar
1/4 cup melted butter
1 cup shredded coconut
1 cup chopped pecans

Bake enough sweet potatoes to have 3 cups of cooked mashed potatoes. Beat eggs and mix with potatoes, butter and vanilla. Add half and half and mix.

Blend topping ingredients and sprinkle over top. Bake about 30 minutes at 375° degrees.
