Fresh Peach Ice Cream

My mother's mother was called Gabo by all her grandchildren. Although reputed to be a superb cook in her day, I rarely saw her in the kitchen (Ella Mae did the cooking as far back as I remember). This recipe comes from Gabo..

5 cups sliced peaches
2 cups sugar
1/4 tsp. salt
1 Tbsp. lemon juice
1 quart light cream (you may use 3 cups half and half and 1 c. heavy cream)

Cover peaches with sugar and let stand half an hour, then press through a colander. Add salt, lemon juice and cream. Turn into a freezer and crank.
