2 cups a.p. flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup shortening
3/4 cup milk
Preheat oven to 450.
1. Measure flour by scooping into a measuring cup and levelling. Mix flour, baking powder and salt until thoroughly blended.
2. Cut in shortening until mixture resembles coarse crumbs.
3. Add most of the milk; stir. If there is still dry mixture not adhering to wet, add remaining milk.
4. Knead very briefly, no more than 10 times. Roll or pat dough out to 1 inch thick. Cut with a water glass or jelly jar into 2-1/2 inch rounds. Press dough scraps gently together, pat out again, and cut remaining biscuits.
5. Place biscuits into metal pie pan, edges touching. When oven is fully preheated, put pan in center of oven, towards (but not touching) the rear. Bake for 10-12 minutes, or until biscuits are golden brown, with brown highlights.
6. Serve at once with butter and jam, jelly, honey or syrup.
