Cornmeal Pancakes
1 cup yellow cornmeal
1/2 teaspoon salt
2 tablespoons honey
1 cup boiling water
1 egg
1/2 cup milk
2 tablespoons melted butter
1/2 cup flour
2 teaspoons baking powder
- Stir together the cornmeal, salt and honey in a large bowl; stir in boiling water and cover. Let sit for 10 minutes.
- Beat egg, milk and melted butter together. Add to softened cornmeal and mix well.
- ift together flour and baking powder, then add them to the batter. Cook cakes on a hot greased griddle at 400° until bubble until edges appear dry. Flip and cook until done. Serve with warm syrup or honey.
