Biscuits
2 cups a.p. flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup shortening
3/4 cup milk
Preheat oven to 450°.
- Measure flour by scooping into a measuring cup and levelling. Mix flour, baking powder and salt until thoroughly blended.
- Cut in shortening until mixture resembles coarse crumbs.
- Add most of the milk; stir. If there is still dry mixture not adhering to wet, add remaining milk.
- Knead very briefly, no more than 10 times. Roll or pat dough out to 1" inch thick. Cut with a water glass or jelly jar into 2-1/2 inch rounds. Press dough scraps gently together, pat out again, and cut remaining biscuits.
- Place biscuits into metal pie pan, edges just touching. When oven is fully preheated, put pan in center of oven, towards (but not touching) the rear. Bake for 12-14 minutes, or until biscuits are golden brown, with brown highlights.
- Serve at once with butter and jam, jelly, honey or syrup.
